Instructions
Ingredients:
2 ounces mezcal (for a smoky backbone; substitute with smoky Scotch if preferred)
1 ounce freshly squeezed grapefruit juice (ruby red preferred)
1/2 ounce pomegranate shrub (see Notes)
1/4 ounce agave nectar (adjust sweetness to taste)
1/4 ounce Aperol (optional, for a bittersweet depth)
1 dash Peychaud’s bitters (optional, enhances the shrub’s tang)
Ice cubes
Garnish: Charred rosemary sprig or dehydrated grapefruit wheel
Instructions
1. Smoke the Glass (Optional, but Dramatic):
Light the tip of a rosemary sprig until it smolders, then invert your chilled coupe or Nick & Nora glass over the smoke to lightly infuse it.
2. Add Liquids:
In a cocktail shaker, combine mezcal, grapefruit juice, pomegranate shrub, agave nectar, Aperol (if using), and bitters.
3. Shake to Chill:
Fill the shaker with ice, seal tightly, and shake vigorously for 12–15 seconds until thoroughly chilled and slightly frothy.
4. Double Strain:
Pour through a Hawthorne strainer and a fine-mesh strainer into the smoked glass for a smooth, pulp-free finish.
5. Garnish & Serve:
Perch a charred rosemary sprig on the rim or float a dehydrated grapefruit wheel on top for an aromatic, fiery presentation.
Notes
Pomegranate Shrub:
To make your own, combine 1 cup pomegranate juice, 1/2 cup sugar, and 1/2 cup apple cider vinegar. Stir until dissolved and refrigerate for at least 24 hours. This adds tangy brightness and subtle complexity.
