Instructions
Ingredients:
1 1/2 ounces gin (preferably a London dry or herbal-style gin)
1/2 ounce rosemary-infused simple syrup
1/4 ounce freshly squeezed lemon juice
3 ounces champagne or dry sparkling wine
Ice cubes
Fresh rosemary sprig, for garnish
Lemon twist (optional garnish)
Instructions:
Prepare the glass:
Fill a champagne flute or coupe with ice to chill. Discard the ice before building the drink.
Add the base:
Pour the gin, rosemary-infused simple syrup, and lemon juice into the chilled glass.
Add bubbles:
Top gently with champagne or dry sparkling wine.
Stir lightly:
Give a very gentle stir once to combine, taking care not to lose carbonation.
Garnish:
Garnish with a fresh rosemary sprig. For added aroma, lightly clap the rosemary between your palms before adding. Finish with a lemon twist if desired.
Notes:
Herbal elegance:
Rosemary brings a savory, piney aroma that pairs beautifully with gin and bright citrus. Adjust the syrup to taste, less for a drier, more elegant cocktail.
Sparkling wine tip:
A brut or extra-brut champagne or sparkling wine keeps the drink crisp and refined.
Background:
The Rosemary Royale is a botanical twist on the classic French 75 and Champagne cocktails, blending herbal notes with bright citrus and celebratory bubbles. It’s a refined, aromatic drink that feels equally at home at garden parties, elegant brunches, or evening celebrations.
Variations:
Swap gin for vodka for a cleaner, less herbal base.
Use honey syrup infused with rosemary for a softer, warmer sweetness.
Add a dash of orange or lavender bitters for extra depth.
Try prosecco instead of champagne for a lighter, fruit-forward version
